The altitude and slow cherry maturation really come through in the cup—clean, bright acidity with a silky body that lingers nicely.

The washed Parainema really shines in my moka pot — syrupy body with a bright citrus snap that lingers. Grown that high up in Santa Bárbara, you can taste the slow ripening in how sweet and clean the cup stays. Already eyeing a second bag.

I brewed this as a pour-over and got this really clean, tea-like cup with almost no bitterness. The Parainema variety seems to hold onto a lot of sweetness without tasting heavy. Genuinely one of the better washed coffees I've had this year.
