衣索比亞 Bekele Belaycho Espresso

The natural process on this one is no joke, the fruit sugars come through so clearly in the cup. Pulled it as espresso this morning and got a syrupy body with almost no bitterness. Easily the most defined Sidama I've brewed at home.

The raised-bed drying really shows in the cup — I'm getting a big jammy blueberry sweetness with just enough acidity to keep it from feeling syrupy. Pulled it as a straight espresso and it stayed smooth, no harsh bite at the finish. Already halfway through the bag.

The natural Sidama beans really come through in a pour-over, syrupy body with a berry sweetness that lingers. I've been brewing it every morning for a week and it hasn't gotten old once.
